Over a Cup of Coffee: Halloween punch and more

This week’s column includes a recipe for “Golden Punch,” my favorite punch recipe. You might choose to serve it with Halloween cookies or cupcakes. Also included in the column are two recipes for salads, one which is an orange color; the other has oranges in it. Both salads would be great when served with a Halloween celebration supper. Of course, all of this week’s recipes might be included in any menus, including those for the upcoming holidays.

Golden Punch

  • 2 cups lemon juice
  • 2 cups orange juice
  • 2 cups sugar
  • 2 cups water
  • 4 quarts ginger ale, chilled

Combine the juices, sugar, and water in a large pitcher or bowl. Let stand 30 minutes. When ready to serve, add the ginger ale. Serve in a punch bowl.

Orange Gelatin Ring

  • 2 packages orange-flavored gelatin
  • 2 cups boiling water or fruit juice
  • 1 pint orange sherbet
  • 1 (11-ounce) can mandarin oranges, drained

Dissolve gelatin in boiling water or juice. Immediately add the sherbet. Stir until melted. Add oranges. Pour into a 1 ½-quart ring mold and chill until firm. Unmold and fill center with Ambrosia Fruit Salad (recipe follows).

Ambrosia Fruit Salad

  • 1 (11-ounce) can mandarin oranges, drained
  • 1 (13-ounce) can pineapple chunks, drained
  • 1 cup flaked coconut
  • 1 cup commercial sour cream or ¼ cup whipping cream
  • 1 cup miniature marshmallows

Mix all ingredients. Chill for 1 hour or overnight. Ambrosia Fruit Salad is delicious served separately as a salad or dessert.
