Superfood Tip: Mushrooms galore

Garnish your plate with mushrooms!
Mushrooms are a type of fungus, but don’t let that scare you! They are a great addition to any meal, as they impart our fifth taste sense, umami, which is savory, hearty, and “meat-like.” Mushrooms are a tasty, economical and nutritious way to enhance your main course. They also are considered a superfood, as they contain very few calories per serving and many vitamins and minerals.
One cup of raw, sliced mushrooms provides 20 calories and serves as a good source of potassium, selenium and copper. Mushrooms also have significant amounts of three B-complex vitamins: riboflavin, niacin and pantothenic acid. If they have been exposed to UV light before harvest, they also will be excellent sources of vitamin D.
These vitamins and minerals along with other bioactive properties of mushrooms will help boost your immune system to keep you healthy as fall sets in.
