Superfood Tip: Big, delicious asparagus are in season

Craig Daily Press Staff Report

Have you notice the jumbo asparagus in the produce section at your local grocery store. For the last few weeks, City Market has sold big asparagus that are packed full of health benefits.

Asparagus are full of various nutrient that help tame your body of nutritious cravings.

According to EatingWell.com, asparagus are loaded with fiber, folate, vitamins A, C, E and K, and chromium, “a trace mineral that enhances the ability of insulin to transport glucose from the bloodstream into cells.”

The juicy vegetable also helps fight cancer.

“This herbaceous plant — along with avocado, kale and Brussels sprouts — is a particularly rich source of glutathione, a detoxifying compound that helps break down carcinogens and other harmful compounds like free radicals. This is why eating asparagus may help protect against and fight certain forms of cancer, such as bone, breast, colon, larynx and lung cancers,” states the website.
