Over a Cup: Taco casserole with green onions

Years ago I had cut out of a newspaper (I can't remember which one) a recipe for a taco casserole. I recently found the yellowed clipping tucked into the pages of one of my cookbooks.

We had never tried it — until now. We liked it, and I hope you will, too.

You'll need these ingredients to pull off this taco casserole: 1 pound ground beef; 1 (15-ounce) can chili beans; 1 (8-ounce) can tomato sauce; 1 cup picante taco sauce; 1 teaspoon garlic salt; 2 cups coarsely broken tortilla chips; 1 cup sour cream; 1/2 cup sliced green onions (with tops); 1 cup shredded cheddar cheese; 1 small tomato (diced); and a small head of lettuce (shredded).

A note about the picante sauce: The recipe apparently gets its name from picante taco sauce. However, I used regular mild picante sauce. I'm not sure if our local stores carry picante taco sauce. And, of course, you can always use a hotter sauce if you want a spicier casserole.

This is a recipe that's easy to personalize to your tastes and likes. For example, you can choose to use mild, medium or hot sauce — even chili beans. You can use more onions, too, and vary the types of cheese. Enjoy!

Taco Casserole with Green Onions


• 1 pound ground beef

• 1 (15-ounce) can chili beans

• 1 (8-ounce) can tomato sauce

• 1 cup picante taco sauce (or picante sauce)

• 1 teaspoon garlic salt

• 2 cups coarsely-broken tortilla chips

• 1 cup sour cream

• 1/2 cup sliced green onions (with tops)

• 1 cup shredded cheddar cheese

• 1 small tomato (diced)

• 1 small head of lettuce (shredded)

Directions: Preheat the oven to 350 degrees. You will need a 2-quart casserole dish (ungreased).

Brown the ground beef and drain. Add beans, tomato sauce, picante sauce and garlic salt. Heat to a boil.

Place the chips in the casserole dish. Top with the beef mixture. Spread sour cream and then sprinkle with onions and cheese.

Bake at 350 degrees for 20 to 30 minutes. Remove from oven.

Top with diced tomato and shredded lettuce. Arrange additional tortilla chips around the edge of the casserole. Makes about 6 servings.
