Over a Cup of Coffee: Thanksgiving recipes
We’ll celebrate Thanksgiving this coming week, so cooks everywhere have been searching for their family favorite recipes.
Have you ever noticed how popular plates of “finger foods” are with Thanksgiving guests? For example, guests are drawn to “veggies” and a dip, arranged on a pretty serving plate. Nibbling on celery and carrots helps keep hunger in check as the main course dishes are set out. And then in the evening, after the meal has settled, guests can’t resist a plate of cookies.
If it’s cookies you’re wanting to bake, you might like “$250 Cookies.” You will need: 2 cups butter, 2 cups white sugar, 2 tablespoons vanilla, 2 cups brown sugar, 4 eggs, 5 cups oatmeal, 2 teaspoons baking powder, 4 cups flour, 2 teaspoons baking soda, 8- ounce Hershey Bar (grated) or Hershey chunks, 12 ounces chocolate chips, 12 ounces peanut butter chips, and 3 cups chopped walnuts. (Can you guess how the recipe got its name?)
Preheat the oven to 350 degrees. You’ll need an ungreased cookie sheet.
Get out a large bowl. Cream together the butter, white sugar, vanilla, brown sugar, and eggs.
In a blender, blend together the oatmeal, baking powder, flour, and baking soda. Add this to the creamed mixture. Then add the Hershey Bar or chunks, chocolate chips, peanut butter chips, and walnuts. Drop by teaspoons on the ungreased cookie sheet. Bake in the 350 degree oven for six to eight minutes, until the cookies are hardly brown.
Arrange the cookies on a holiday plate with other cookies or candies.
I have made this recipe. The cookies are delicious, but there is so much batter that I just kept baking and baking. You might want to cut the recipe in half the first time.
Now, from sweets to vegetables. There are lots of variations of broccoli casseroles, all of which would be delicious with a turkey dinner. An example is “Broccoli Rice.”
To make “Broccoli Rice”, you will need: 1 cup chopped celery, 3/4 cup chopped onion, 2 tablespoons margarine, 1 (10-ounce) package frozen chopped broccoli, 1 (8-ounce) jar Cheez Whiz, 1 (10 1/2-ounce) can cream of mushroom soup, and 3 cups cooked rice.
Saute the celery and onions in the margarine. Cook the broccoli according to the directions on the package. Combine all of the ingredients in a 2 1/2-quart greased baking dish. Bake uncovered at 350 degrees for 30 minutes. The recipe serves eight to 10 people.
