Over a Cup of Coffee: Craig’s Diane Prather serves up recipes for Valentine’s Day

Wednesday is Valentine’s Day. This year, I haven’t yet taken time to bake cookies or make candy. In fact, I haven’t even had time enough to send out Valentines. But I did take time to hunt up two recipes you might use for the holiday. The cookies are drop-by-teaspoonfuls, but you might sprinkle them with red candies before baking. The cookies are delicious.

I have made the yummy chocolate dessert several times. I wait to top it with additional Cool Whip until right before serving.

Four Layer Chocolate Dessert

1 cup all-purpose flour

1/2 cup margarine, melted

1/2 cup chopped pecans

1 (8-ounce) package cream cheese

1 cup powdered sugar

1 cup thawed Cool Whip

2 (3-ounce) packages instant chocolate pudding mix

3 cups milk

1 teaspoon vanilla extract

Additional thawed Cool whip

Slivers of chocolate

Combine the flour, margarine, and pecans, mixing well. Spread the mixture in a 9-by-13-inch baking dish. Bake at 350 degrees for 15 minutes. Allow to cool. Combine the softened cream cheese, powdered sugar, and 1 cup Cool Whip until well-blended. Spread over the cooled crust. Chill. Mix together the pudding mixes, milk and vanilla. Beat until thickened. Pour pudding over the cream cheese mixture. Top with Cool Whip, and garnish with chocolate slivers. Chill until ready to serve. Makes 12 to 15 servings.

Melt In Your Mouth Cookies

1 cup powdered sugar

1 cup granulated sugar

1 cup salad oil

1 cup butter or margarine, softened

2 eggs

4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

2 teaspoons vanilla extract

Cream together the sugars, salad oil and margarine or butter. Add the eggs, and beat until fluffy. Sift dry ingredients together, and add gradually to the creamed mixture. Add vanilla. Mix well. Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Yields four dozen cookies.
