Over a Cup of Coffee: Marlene’s Popcorn Balls

Popcorn Balls

2 cups sugar

1 cup white Karo

2 cubes oleo

1/2 teaspoon soda

8 quarts popped corn

Stir together the sugar and Karo. Dissolve over heat. Add and melt the oleo. Then add the soda. Pour over popped corn. Cool slightly until the balls hold their shape. (This is important. If you try to form the balls before the syrup cools, the popcorn won’t stick together.) Shape into balls. The recipe makes 3 dozen.

I haven’t made Iva Decker’s popcorn balls yet, but I did try the popcorn candy recipe that Dixie Jones gave me. I had a little time so I chose a recipe that I could make in a hurry. I’ll make Iva’s recipe soon.

The “Popcorn Candy” is delicious. I can see what Dixie means about being careful not to overcook the syrup. I don’t think that I did, but it would be easy to do. The only problem I had with the candy was not popping the corn long enough, so I ended up with a bunch of unpopped kernels. I tried to separate them from the popped corn, but I didn’t do a very good job, so we’re having to pick them out of the candy. Thanks again for the recipe, Dixie.

In the meantime, Marlene Tate, of Meeker, sent me a recipe for “Popcorn Balls.” She said that she got the recipe from a friend and that she makes the popcorn balls every year.

Marlene said that she moistens her hands with water before working the popcorn into balls.

This week’s column also features a salad recipe that my daughter-in-law makes for holiday dinners. It’s a family favorite.

Thanks, Cindy!
