Over a Cup of Coffee: Celebrating Washington’s birthday

Traditionally, George Washington’s birthday is celebrated with a cherry dessert — like cherry pie, for example. Your family might enjoy celebrating Feb. 22 (or perhaps Presidents’ Day) this coming Monday with one of the desserts featured in this week’s column. Both recipes are from my cookbook without a cover.

French Cherry Pie


• 3 egg whites

• 3/4 cup granulated sugar

• 12 saltine crackers

• 1 teaspoon vanilla extract

• 1 teaspoon vinegar

• 1 cup chopped nuts

Beat egg whites until stiff. (Save the yolks for scrambling.) Add the sugar, and mix until dissolved. Add the 12 crushed saltines, vanilla, vinegar, and chopped nuts. Spread in a 9-by-13-inch pan. Bake at 325 degrees for 20 minutes. Cool for 20 minutes. Meanwhile, make the filling.


• 3 cups whipping cream (or Cool Whip)

• 1 (8-ounce) package cream cheese, softened

• 2/3 cup powdered sugar

• 1 (31-ounce) can prepared cherry pie filling

Whip cream and add softened cream cheese and powdered sugar. Mix all together and spread over cooled crust. Top with cherry pie filling. Refrigerate for about eight hours before serving. This recipe can be made days ahead of time.

Swedish Cherry Tart


• 1 cup all-purpose flour

• 1/2 cup butter or margarine

• 5 tablespoons powdered sugar

Mix ingredients together. Pat the mixture down in the bottom of a 11-by-7-by-2-inch baking pan. Bake for 15 minutes at 350 degrees. Meanwhile, make the filling.


• 2 eggs, beaten

• 1 1/2 cups granulated sugar

• 1/4 teaspoon salt

• 1/4 cup all-purpose flour

• 1 teaspoon vanilla extract

• 3/4 cup ground walnuts

• 3/4 teaspoon baking powder

• 3 cups tart cherries, drained

Mix together and pour on baked crust. Bake for 30 minutes at 350 degrees. Serve plain or with vanilla ice cream. Makes six to eight servings.
