Over A Cup: Lisa’s luscious Jell-O Cake has different options

Lisa's Jell-O Cake

To make “Lisa’s Jell-O Cake,” you’ll need:

• 1 yellow cake, baked and cooled

• 1 large box of Jell-O gelatin, your choice of flavor

• Water, as called for on the gelatin box

• 1 large box instant pudding mix, your choice of flavor

• Milk, as called for on the pudding box

• 2 packets of dry Dream Whip

Bake the cake and cool it. Mix up the Jell-O gelatin according to directions on the box. Using the handle of a wooden spoon, make holes in the cake. Pour the gelatin over the cake. Mix up the pudding according to the directions on the box. Sprinkle the dry Dream Whip on the pudding and whip the mixture. Pour over the top of the cake and refrigerate. Vary Jell-O gelatin and pudding mixes as you wish.

It’s not long now until St. Patrick’s Day, and Easter, too.

This week’s recipe comes courtesy of Lisa Davis, of Craig. It’s one of those luscious recipes that’s versatile, and Lisa is sharing it with us just in time for the spring holidays.

To make “Lisa’s Jell-O Cake,” you will need: a yellow cake (from either “scratch” or a box mix) that is cooled; a large box of Jell-O gelatin (any flavor); a large box of instant pudding mix (any flavor); milk as called for in the pudding directions; and 2 packets of dry Dream Whip mix.

First, bake a yellow cake and let it cool. Then mix the Jell-O gelatin with the water as directed on the box. Using the handle of a wooden spoon, make holes in the top of the cake. Pour the gelatin over the cake. Then mix up the pudding, following the directions on the box. Sprinkle the dry Dream Whip in the pudding and whip. Pour the pudding frosting on top of the cake and refrigerate. Delicious.

Lisa said the reason for the yellow cake (over a chocolate cake) is to be able to see the colored gelatin.

A white cake would probably work, too. Think of the ways you can vary the gelatin and pudding flavors. For example, for St. Patrick’s Day you might use a yellow cake, lime gelatin, and pistachio pudding.

For Easter, the cake might be made with strawberry gelatin and vanilla pudding and then whole strawberries used as decorations on top of the cake. You get the idea.

Lisa said she sometimes bakes a chocolate cake and pours chocolate pudding so it goes through the holes in the cake. She puts more pudding on top.
