New Mexican restaurant coming to Hayden

Vallarta’s Mexican Restaurant, inside Centennial Mall at 1111 W. Victory Way, is known for its fajitas and its Cadillac, Vallarta and agave margaritas. The restaurant now is opening a location in Hayden.

— Hayden residents and visitors soon will have convenient access to Margarita Gomez’s authentic Mexican food.

“My mom puts the magic in the kitchen, and she will do the same with the restaurant in Hayden,” said Rogelio “Roy” Nunez, who will operate Vallarta’s Mexican Restaurant in Hayden with his brother Adrian Nunez.

Since 2008, the Nunez family has operated Vallarta’s Mexican Restaurant in Craig, and they have been wanting to expand to Hayden.

“I hope that the people like our food and give us a try,” Nunez said. “We are excited to be in Hayden.”

The family hopes to have the restaurant open by the end of December in the space formerly occupied by We B Smokin’ BBQ at 825 W. Jefferson Ave. The barbecue restaurant closed in September after being open for about nine months. The owners of the property, which included Louis Nijsten, ran the barbecue restaurant but decided to close it after their general manager decided to leave Colorado.

“It made sense to find a tenant,” Nijsten said.

He said he was excited that Vallarta’s was moving into the space.

“They have a really good reputation,” Nijsten said. “They’ve proven that they can make it work.”

Nunez said they think the restaurant will do well because there are not a lot of other dining options in Hayden, especially for Mexican food. The location along U.S. Highway 40 also was appealing.

Nunez said the food will be identical to what is offered in Craig. Margaritas, beer and other Mexican drinks will help round out the menu. They plan on being open every day, except some holidays, and will serve lunch and dinner.

“It’s a family restaurant,” Nunez said.

Mayor Jim Haskins said it was great that a new restaurant was coming to town.

“They have great Mexican food,” Haskins said. “People seem to be very excited.”
