Vegetable barley bake

• 1 (15 ounce) can black beans, drained, rinsed

• 1 (10 ounce) package frozen whole kernel corn, thawed



• 1 1/4 cups chicken or vegetable broth

• 1 cup quartered fresh mushrooms



• 1/2 cup pearl barley

• 1/4 cup bulgur

• 1 medium carrot, peeled, thinly sliced

• 1/4 cup chopped onion

• 1 garlic clove, minced

• 1/2 cup shredded sharp Cheddar cheese

Combine the beans, corn, broth, mushrooms, barley, bulgur, carrots, onion and garlic in a bowl and mix gently, spoon into a baking dish. Cover and bake at 350 degrees for one hour. Stir halfway through the cooking process. Remove from oven, sprinkle with cheese and cover for five minutes or until the cheese melts. Serve immediately. Serves 4
