Healthy Eating: Kale with Balsamic-Walnut Sauce

This sauce is a perfect topping for kale and other hearty vegetables.

1 bunch kale, stems removed and leaves coarsely chopped

3 tbsp. balsamic vinegar

2 tbsp. dijon mustard

1 tbsp. soy sauce

1 tbsp. maple syrup

2 cloves garlic, minced

1 cup chopped walnuts

3 to 4 tbsp. water

Steam kale until leaves are limp, about four to five minutes. In a food processor, combine vinegar, mustard, soy sauce, syrup and garlic. Add walnuts and process until a smooth paste develops. Thin the mixture by adding water until the desired thickness is reached. To serve, top each helping of steamed kale with a spoonful of walnut sauce.
