Healthy Eating: Green Tomato Salsa
4 cups chopped green tomatoes
3 to 5 jalapeno peppers, seeded and finely chopped
1 cup finely chopped red onions
2 cloves garlic, finely chopped
1/4 cup fresh lime juice
1/4 cup finely chopped cilantro
1 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. black pepper
In a 3-quart saucepan, combine tomatoes, peppers, onions, garlic and lime juice. Bring to a boil over medium-high heat, stirring constantly. Stir in cilantro, cumin, oregano, salt and black pepper. Reduce heat and simmer for 5 minutes, stirring frequently. Remove from heat and allow it to cool. Makes about 3 cups.
