Healthy Eating: Fresh Peach Salsa
An exciting way to enjoy fresh peaches with a spicy kick!
2 medium peaches
1/4 cup diced onion (Vidalia or other sweet variety recommended)
3 tablespoon lime juice (1-2 limes)
1/2 jalapeno, seeded and finely diced
1 clove garlic, minced
1 tablespoon chopped cilantro
Fill a small saucepan with 4-inches of water, then heat until boiling. One at a time, place a peach in the hot water for 15-20 seconds, then remove with a slotted spoon. Immediately put the hot peach in a bowl of ice water to stop the cooking process. Slip the skin off of the peaches then pit and dice them into ½-inch pieces. Combine all ingredients in a large bowl and refrigerate for one hour to allow the flavors to blend.
