1 1/2 cups ripe banana, mashed (about 3 medium bananas)

1 teaspoon vanilla extract

1 egg

2 cups rolled oats

3/4 cup dried cherries

1/2 cup pecans

1/2 cup semisweet chocolate chips

1/2 cup sunflower seeds

1/2 cup pepitas (pumpkin seeds)

1/2 cup almonds, sliced

1/4 cup hemp seeds

1 teaspoon cinnamon

1/4 teaspoon fine grain sea salt

Preheat oven to 350 degrees. Spray or lightly grease large glass baking dish with oil. Mash the bananas until smooth and stir in the vanilla extract, egg and oats. Chop the cherries and pecans using a food processer. Add these and all remaining ingredients to the banana mixture, mixing until combined. Spread mixture evenly into the greased baking dish, pressing until smooth. Bake for about 25 minutes until golden. Let cool for five minutes, remove granola bar onto a cooling rack (may need to slide knife around the edges of the dish to loosen). To cool quickly, move to freezer for last five minutes). Let cool, then slice into 16 portions. Bars will keep in the freezer for two months. Makes 16 bars.
