Healthy eating: Easy asparagus risotto
Ingredients:
1 cup Arborio rice
¼ cup minced onion
1 tablespoon olive oil
3 cups chicken broth
¾ pound asparagus, trimmed and chopped in 1-inch lengths
1 tablespoon grated Parmesan cheese
Instructions:
In a 2-quart, microwave-safe dish, combine rice, onion and olive oil, mix well. Microwave on high for 2 minutes, then stir in the broth. Continue to microwave on high for 15 minutes, stirring every 5 minutes. Add asparagus, stir to combine and microwave on high for a final 5 minutes. Remove from microwave, stir in the cheese and let stand for 5 minutes.
Yield: 4 servings
