Healthy Eating: Asian Edamame Salad
1 pound cooked, shelled edamame
1/4 cup sliced almonds
2 green onions, thinly sliced
2 tablespoons sesame oil
1 tablespoon rice vinegar
2 teaspoons soy sauce
1/2 teaspoon Asian chili garlic sauce or other hot sauce
In a large bowl, combine edamame, green onions and almonds. In a small bowl, whisk together sesame oil, rice vinegar, soy sauce and chili sauce. Toss the edamame mixture with dressing to coat. Serves 8.
