Healthy Eating: Apricot-Filled Oatmeal Bars

A kid pleaser, these bars can easily be made with your favorite preserves.

1 1/2 cup flour

1 1/2 cups quick-cooking or old-fashioned oats

3/4 cups packed brown sugar

1/2 teaspoon baking soda

1/2 cup low-fat buttermilk

1/3 cup canola oil

1 (10 ounce) jar all-fruit apricot preserves

Combine the flour, oats, brown sugar and baking soda in a bowl and mix well. Add the buttermilk and canola oil and stir until combined; mixture will appear slightly dry. Press 3/4 of the oat mixture over the bottom of a 9-inch-by-13-inch baking pan sprayed with nonstick cooking spray. Spread with the preserves. Sprinkle with the remaining oat mixture. Bake at 350 degrees for 20 to 25 minutes or until the edges pull from the sides of the pan. Let stand until cool. Cut into bars. Yield: 36 bars.
