Healthy Eating: Apple Chutney

The key to this recipe is slowly caramelized onions that add a wonderful flavor to the dish.
2 tablespoon butter
2 cup thinly sliced, julienne red onion,
3 pounds apples, peeled and diced
1/2 cup brown sugar
1 cup dried cherries, or currants or raisins

1/2 teaspoon salt
In a large skillet, melt butter over medium high heat. Add the onions to the pan and saute until the onions are rich brown color. Be careful not to burn the onions. Once the onions are caramelized, add diced apples and brown sugar and continue to saute until the apples are tender, about seven minutes. Turn off the heat and mix in dried cherries, cinnamon and salt. Serve as a side dish or over grilled meat. Makes 4fourcups.
