Hayden brewery grand opening this weekend

“We’re running low on our IPA and stout,” said Jared Aylor, who opened the brewery with brewmaster Neil Siggson. “The stout has been extremely popular. We’re having trouble keeping up with demand.”

With Siggson working on a fresh batch of IPA, the brewery owners were planning on having six beers on tap for this weekend’s grand opening. The brewery is located along North Walnut Street behind A-1 Liquor, and Fireside Catering will be serving food from 3 to 7 p.m. Saturday.

In addition to the Flat Tops IPA and the Snowshoe Stout, Hayden Pale Ale, Howelsen Pilsner, Sandhill Crane Red and the Haystack Hef will be on tap.

Aylor and Siggson worked for several years to get the brewery open. The two were neighbors who both share an affinity for beer. Siggson started brewing in 2001 after acquiring a home brewing kit. He started on the stove top before upgrading to a larger garage system.

“I’ve always had a passion for making things like beer,” Siggson said.

One day, Aylor walked over to Siggson’s house six houses away, knocked on the door and pitched the idea for a brewery.

“This sounds kind of fun,” Siggson told Aylor.

Siggson said he has been fine-tuning the beer recipes for the past four years. Siggson and Aylor both have decided the IPA is their favorite. Even with the amount of hops used, it is not a super bitter beer.

“It’s a very West Coast-style IPA,” said Siggson, who grew up in California.

The brewery is located in a 1,500-square-foot building, with two overhead garage doors and a large, blue-stain lodgepole pine bar.

The outside patio includes a hatch in the fence through which food is delivered from the Hiway Bar next door.

Their seven-barrel brewing system from Bennett Forgeworks in Ridgeway brews about 12 kegs of beer.

With a Sunday Ticket, customers have the ability to watch four different NFL games.

“There are a lot of people that come through here that like to watch their game,” Aylor said.

The brewery is open from 5 to 8 p.m. Monday through Thursday, from noon to 9 p.m. Friday and Saturday and from 10:30 a.m. to 9 p.m. Sundays.

To keep up with demand, the brewers are eyeing the 1,000 square feet of available space next door and want to add three or four more fermenters.

Currently, the only other place their beer is available is Carelli’s Pizzeria in Craig, and customers there go through the beer fast, Aylor said.

“There are a bunch of people asking, but we just can’t keep up,” Aylor said.
