Ding-A-Ling Casserole

1 pound ground beef

1 small onion, chopped

1 large can tomatoes

1 (10-ounce) package noodles

1 can mushrooms

1 small can tomato sauce

Grated cheese

Preheat oven to 325 degrees. Cook noodles in water as directed on the package. Meanwhile, put a little salt in the bottom of a large skillet. Add ground beef and brown, stirring occasionally. Add chopped onion and continue cooking until browned. Add tomatoes and tomato sauce and simmer for a few minutes. Add drained noodles and mushrooms. Mix well. Put in a 9x13-inch casserole dish and sprinkle with cheese. Cook uncovered for about 30 minutes, or until heated through. This casserole can be prepared ahead and then baked. It can also be frozen.

About 30 years ago, I cut this week’s two recipes from newspapers and put them in my “to try” file.

The clippings are yellow with age, but this last week, I finally tried them.

I like both recipes.

The first is “Ding-A-Ling Casserole.” I have no idea how the casserole got its name, but it tastes good.

The ingredients are: 1 pound ground beef, 1 small onion (chopped), 1 large can tomatoes, 1 (10-ounce) package noodles, 1 small can mushrooms, 1 small can tomato sauce, and some grated cheese.

According to the recipe, first put some salt in the bottom of a skillet. I didn’t do this step but salted the mixture later.

Add the ground beef and begin browning, stirring occasionally.

Add the chopped onion and continue cooking until both are browned. (I just made sure the beef was browned and the onion cooked.) Then add tomatoes and tomato sauce and simmer for a few minutes.

Preheat the oven to 325 degrees. Cook the noodles as directed on the package. Drain. Add the noodles and mushrooms. Mix well.

Put in a casserole and sprinkle with grated cheese. Bake, uncovered, in the 325 degree oven until thoroughly heated, about 30 minutes.

This casserole can be made up in the morning and baked later in the day. It can also be frozen.

This is a real good casserole, but my husband and I agreed that it needed just a touch more seasoning, perhaps a little garlic salt.

I like this next recipe a lot. I’ve seen some recipes similar to it, but haven’t tried them. To make “Fake Steak,” you’ll need these ingredients: 2 pounds ground beef, 1 cup water, 1 cup bread crumbs, 1 envelope onion soup mix, and 1 can cream of mushroom soup.

Mix the ingredients, except the mushroom soup, and pat into a 9-by-13-inch casserole dish. Cover with wrap and refrigerate overnight.

The next day, preheat the oven to 350 degrees.

Cut the beef mixture into serving-size pieces. Coat each side with flour and brown in a little butter (I used canola oil). Put the browned pieces back in the casserole dish. Cover with the can of mushroom soup that has been mixed with a can of water.

Bake at 350 degrees for about 1 1/2 hours. I covered the casserole dish with foil during baking.

The meat looks like steak and tastes great. I wish that I’d tried the recipe years ago. I think the recipe would be great for a busy day with lots of family around.
