Diane Prather: New Year is time to try new food

Craig — When we get together with family and friends on New Year’s Eve, we have chili and other kinds of soup.
I think this week’s soup would be a delicious addition to the menu. This Tortilla Soup recipe was given to me by my daughter-in-law Cindy Prather who got it from Matt Ray, physical education teacher at Ridgeview Elementary.
To make the soup, you need: 8 ounces carrots, sliced; 8 ounces celery, sliced; 8 ounces onions, chopped; 1/2 teaspoon garlic powder; salt and pepper (to taste); 2 tablespoons oil; 4 cans chicken broth (58 ounce total); 2 cans diced tomatoes (28 ounce total); 1 packet taco seasoning; 10 corn tortillas, broken into small pieces; 12 ounce chicken, cooked and diced; 1 cup milk; 12 ounce cheese, shredded; and 1 small can chilies.
You can also make your own taco seasoning. Combine together the following, which equals one taco season packet: 2 teaspoons chili powder, 1 1/2 teaspoons paprika, 1 1/2 teaspoons cumin, 1 teaspoon onion powder, 3/4 teaspoon garlic salt, 1/2 teaspoon salt (optional) and a dash of cayenne.
To make the soup, saute the carrots, onion and celery in the oil. Season with the garlic powder, salt and pepper.
Add the chicken broth and bring to a boil. Add the tomatoes, chilies, taco seasoning, and chicken. Add the tortilla pieces. Boil for 20 minutes, stirring often.

Reduce heat and add cheese. Simmer for 10 minutes. Add milk and simmer another 10 minutes. Serve. Garnish as desired (avocado, cheese, tortilla chips, and etc.).

Another addition to a New Year’s Eve table might be Fruit Pizza. I have seen several variations of this recipe. Experiment with different kinds of fruit and toppings (other than listed for these directions).
To make “Fruit Pizza,” you’ll need: 1 roll refrigerator sugar cookie dough, 8 ounce softened cream cheese, 1/3 cup sugar, 1/2 teaspoon vanilla, 1/2 cup peach preserves or marmalade, 2 tablespoons water and fruit. Suggested fruit for this recipe includes: 1 banana, 2 kiwi, 1-cup strawberries (halved) and 1/2 cup fresh blueberries.
Preheat the oven to 375 degrees. Lightly grease a 12-inch pizza pan.
Press the cookie dough evenly into the pizza pan. Bake for 10 to 12 minutes, until golden. Cool.
In a small bowl, combine the cream cheese, sugar, and vanilla until smooth. Spread over the cooled crust.
Peel and slice the banana. Toss in a little lemon juice to prevent browning. Peel and slice the kiwi.
Arrange the banana slices, kiwi, strawberries and blueberries over the cream cheese mixture.
In a small bowl, combine the marmalade or preserves and water. Spoon over fruit. Chill for 1 hour.
Consider using other kinds of fruit such as pineapple and mandarin oranges (well-drained) and different varieties of marmalade or preserves.
