Cowbelle’s Kitchens

Moffat County Cowbelles is a 20-member group of women dedicated to the preservation of agriculture, and specifically the beef industry in the area.
The group, which has chapters throughout Colorado, has been operating in Craig since 1952. Originally, members served as helpers to local cattlemen, often putting on social events. Today, the women work to educate the community about its agricultural heritage through Ag-Day, presentations at local schools and a scholarship presented to a local graduating senior.

Meat Balls Supreme
From the kitchen of Marie Schneider, of Craig
1 pound ground beef
1 cup dry bread crumbs
1 beaten egg
1 teaspoon salt
1/8 teaspoon pepper
3 tablespoons minced onion
1/4 cup finely chopped celery
1 can mushroom soup diluted with 1 cup water
Mix beef with crumbs, egg, salt, pepper, onion, and celery.
Shape into balls and brown. Pour mixture over balls.
Cook 25 minutes on top of the stove.

Moffat County Stew
From the kitchen of Arloa Gerber, of Craig
1 1/2 pounds beef chuck, cut into 1 1/2 inch cubes
1 tablespoon fat
2 cups boiling water
Dash lemon juice
Dash Worcestershire sauce
Small clove garlic
1 small sliced onion
1 bay leaf
1 tablespoon salt
Dash of pepper
Brown beef on all sides in fat. Add other ingredients and simmer two hours. Then add these vegetables and cook until done:
2 carrots, quartered
1 stalk celery
3 potatoes, cubed
1 large onion, chopped
Sprig of celery
