It's summertime, and summer squash is in season. It also can be easy to grow for some of us. With squash in peak season, it offers peak nutrition. Squash contains an array of powerful antioxidants called carotenoids. It also provides an impressive variety of vitamins and minerals, including: magnesium, B vitamins, vitamin C, protein and fiber. It’s considered a starchy vegetable, so if you are diabetic or controlling carbs, stick with the half-cup portion size.
