Next week we’ll celebrate Valentine’s Day. Betty Ann Duzik, of Craig, called with her recipe for Valentine’s candy that she makes each year. She puts the candy mixture in a small heart-shaped pan (about 4 or 5 inches across), but she said that you can use any shape of pan. You can use muffin liners, too.

Sometimes people add melted paraffin to chocolate when they make candy. Betty said she used to melt it with the chocolate in this recipe but hasn’t used it for some time.

This also might be a good time to make some popcorn balls or popcorn candy from the recipes readers sent in at Christmas. Use red gelatin or red candies for Valentine’s Day.
The second recipe is one I have made a couple of times. You can use any kind of pie filling, but cherry or strawberry would make a nice coffee cake for Valentine’s Day.

Betty Ann's Valentine Candy
2 cups sugar
1 1/2 cups peanut butter (creamy or crunchy)
4 teaspoons melted butter
1/2 teaspoon vanilla
16 ounces chocolate chips
Mix sugar, peanut butter and vanilla. Stir until well-mixed. Melt 16 ounces chocolate chips of any kind. Pour melted chips into the bottom of pan but save a little bit. Put candy mixture on top of the chocolate in the pan, but leave a little space around the sides. Pour chocolate in the space and let a little drizzle over the side of the candy mixture.

Festive coffee cake
1 box yellow cake mix
1 (20-ounce) can cherry pie filling*
1/3 cup brown sugar
1 tablespoon flour
1 teaspoon cinnamon
1 tablespoon margarine
1 cup chopped nuts
*You can use other kinds of pie filling.
Preheat the oven to 350 degrees. Grease and flour a 9x13-inch pan. Stir the cake mix and eggs together (do not add other ingredients on the cake mix box). The batter will be stiff. Add the cherry pie filling and mix well. Spread in the pan. Mix up the topping ingredients and sprinkle the topping over the batter. Bake for about 35 minutes at 350 degrees. Serve with whipped topping or ice cream.
