One cup of kale is only 25 calories and is loaded with essential vitamins and minerals. One serving of kale contains all of the vitamin A, K, and C that we need in one day. It is also a rich source beta carotene, leutin, B vitamins, and many minerals such as copper, calcium, sodium, potassium, iron, manganese and phosphorus. You can prepare kale in a salad, warmed with a little oil in the sauce pan, or blend in with a fruit smoothie.
