Over a Cup of Coffee: Making meat loaf

This week I’ve been hungry for meat loaf, one of my favorite meat dishes. Our family likes it, too, especially our son, Jamie, who could live off meat loaf sandwiches. I always make sure there’s meat loaf in the refrigerator when he’s here.

I don’t follow a recipe when I make meat loaf. I just mix up bread crumbs or oatmeal, milk, egg, seasonings and ground beef. Sometimes I use part ground pork and part ground beef.

My husband, Lyle, likes a moist meat loaf, so he really likes a recipe that Stacey Gray, of Craig, sent awhile back. Her Mexican Meat Loaf is different because it isn’t tomato-based like so many other recipes. Lyle also likes this meat loaf because it has green chilis in it. So because I was hungry for meat loaf this week, I decided to hunt up another recipe to try out. I went through my files and cookbooks and found recipes that called for different varieties of tomato soup, mixed vegetables, cheese, taco seasoning and even horseradish.

I couldn’t decide on one recipe, so I made the meat loaf as I usually do but added 1/2 cup chopped green pepper, 1/2 cup chopped onion, a little dry onion soup mix and tomato sauce. I liked the taste, and the meat loaf turned out fairly moist. But I’m still experimenting.

In the meantime, I found a Taco Meat Loaf recipe in my “to try” file (source unknown). The ingredients for this recipe are: 2 pounds ground beef, 1 envelope Lipton onion or beef soup mix, 1/2 cup chopped sweet green pepper, 1 tablespoon chili powder, 1 egg (beaten), 1 package of taco powder mix (or 1 small jar taco sauce), 1 cup fine cracker crumbs (or 1/2 cup instant oatmeal), salt and pepper (to taste), 1 cup lettuce (chopped), 1 cup tomatoes (chopped) and 1 cup shredded cheddar cheese.

Combine all of the ingredients, except the lettuce, tomato and cheese. Mix well and place in a loaf pan. Heat the oven to 350 degrees. Bake for 45 to 50 minutes.

When you remove the meat loaf from the oven, top with the lettuce, tomatoes and cheese. Doesn’t this sound good?
