Holiday Fruit Cookies
• 1/2-cup shortening
• 1/2-cup cream cheese, softened
• 1 cup light brown sugar, firmly packed
• 1/2-cup granulated sugar
• 2 eggs
• 3 cups flour
• 1/2-teaspoon baking soda
• 1/2-teaspoon salt
• 1 tablespoon vanilla
• 2 cups candied fruit, mixed
• 2 cups broken pecans or almonds
Preheat the oven to 350 degrees. In a large bowl, cream the shortening and cream cheese until smooth and fluffy.
Add sugars and eggs, mixing well. In a separate bowl, sift together the flour, baking soda, and salt. Add the flour mixture to the sugar mixture. Add vanilla.
Then add the candied fruit and nuts. Mix well. (You may have to mix it with your hands.)
Drop by spoonfuls onto cookie sheets that have been lightly oiled. Bake at 350 degrees for about 10 to 12 minutes. The cookies will be just browned at the edges.
It is less than two weeks until Christmas!
This week I came across the cookie recipe for this column. I haven’t tried it yet because I’m a wee bit behind with my holiday chores.
I haven’t even decorated the tree yet.
Anyway, I intend to try the recipe soon because my husband likes fruit cake, and these cookies are made with candied fruits.
If you’d like to make “Holiday Fruit Cookies,” you will need the following ingredients: 1/2-cup shortening, 1/2-cup softened cream cheese, 1 cup firmly-packed brown sugar, 1/2-cup granulated sugar, 2 eggs, 3 cups flour, 1/2-teaspoon baking soda, 1/2-teaspoon salt, 1 tablespoon vanilla, 2 cups candied fruit (mixed), and 2 cups broken-up pecans or almonds.
