‘Quick Chocolate Candy’
• 16-ounce package of chocolate candy coating
• Can of nuts (your choice)
Melt the chocolate in the microwave according to the directions on the package. Stir until smooth. Add the nuts and stir until they are completely covered with chocolate. Spoon the candies onto foil or wax paper and let set up.
Enjoy. You can also make chocolate-covered pretzels.
It doesn’t seem possible that I’ve written another year of “Over a Cup of Coffee” columns.
One recent morning, over coffee, I thought about some of the recipes that were featured in the column over the year and the nice people I met who contributed recipes.
Meeting all of the readers is one of the best parts about this column.
If I had to select the columns that were the most fun, they would be those that featured recipes for the single guys who don’t cook much.
The idea for the recipes came from Craig Daily Press Editor Josh Roberts who has a pan with a handle. Just about two weeks ago, I met up with a reader in the parking lot at the grocery store.
She wondered if the single guys who don’t cook much know that it’s not a good idea to put a Styrofoam cup in the microwave. (Did you know that?)
Anyway, the readers have been very supportive in contributing recipes with not many ingredients.
Over the Christmas holiday, I didn’t have much time so I had to rely on simple recipes, too.
For example, I made three batches of chocolate candy using chocolate candy coating. You single guys might enjoy making candy this way, too. It takes only a few minutes.
All you have to buy to make “Quick Chocolate Candy” is a 16-ounce package of chocolate candy coating and some nuts.
The choice of nuts is up to you. Salted or unsalted peanuts or mixed nuts can be used.
The amount depends on just how nutty you like your candy. I used an 11.5-ounce can of mixed salty peanuts and other nuts to make mine. (The candy coating also comes in a vanilla flavor.)
It’s as simple as the recipe above. And, Josh, you don’t even have to use your pan with a handle.
You can also cover pretzels with the chocolate.
