To make white chili, you’ll need:
• 3 cans Northern beans
• 1 (7-ounce) can chopped green chilies
• 2 cups diced chicken
• 1/2 cup chopped onion
• 2 teaspoons chicken bouillon
• 1 cup water
• 1 teaspoon chili powder
• 1 small can shoepeg corn
Heat and serve with grated cheese.

Most probably agree that a pot of chili is good any time. However, it’s especially good when the weather is cold and snowy.
Last year, this column featured several chili recipes made with chili beans and ground beef.
Our family associates this kind of chili with a Halloween years ago when our grandchildren were small.
My husband and I always spent Halloween evening in Craig with our son, Jamie, and his family. It was our job to pass out candy while Jamie and Brandi took their own children out to get treats.
This particular Halloween, Brandi had spent all morning putting chili ingredients in slow cookers, that way we’d have a hot meal when the trick-or-treat festivities slowed down.
During the day, Jamie came home and couldn’t resist tasting the chili. He likes spicy foods, and he decided the chili just wasn’t spicy enough.
So, he added some of his own ingredients, which I’m sure included Jalapeno peppers and maybe even some juice out of the bottle.
The chili simmered all day.
That night, we were all hungry and the chili smelled so good. But surprise, it was so hot that none of us, except Jamie, could eat it. Brandi tried adding more tomatoes. Nothing helped.
We filled up on crackers and cheeses and other snack foods. In the end, Jamie had a lot of chili to himself, and he has never been allowed around a chili pot again.
A couple of weeks ago, I requested white chili recipes for this column, and Craig resident Phyllis Barainca sent me one.
I haven’t had a chance to try it yet, but Phyllis said that they like it and it’s easy. She got the recipe from her friend, J’Lea Driver, some years ago.
