I found this week's first recipe in a newspaper clipping in my file of untried recipes.
"Macaroni-Beef Skillet Supper" yields 8 servings of about 270 calories each. You will need the following ingredients: 1 cup elbow macaroni, 1 pound lean ground beef, 1 cup diced onions, 1 clove garlic (mashed), 2 tablespoons oil, 1 (8-ounce) can tomato sauce, some freshly ground pepper (to taste), 1 cup catsup, 1 (8-ounce) can mushroom stems and pieces (drained), 2 tablespoons Worcestershire sauce and 1/2 teaspoon Italian seasoning. I don't have ground pepper so used regular black pepper.
Cook the macaroni in boiling water according to the package directions. Drain and set aside.
Cook the meat, onion, and garlic in the oil until the meat loses its pink color and the onions are tender. Add pepper, tomato sauce, catsup, mushrooms, Worcestershire sauce and Italian seasoning. Bring mixture to a boil, and then simmer gently for about 5 minutes. Mix in the cooked macaroni and simmer for 5 more minutes. That's it.
You might want to mix up a "Mandarin Orange Salad" to go with your "Macaroni-Beef Skillet." I've seen several variations of this recipe with different names, including "Orange Cottage Cheese Salad."
You'll need: 1 (8 or 9-ounce) container of whipped topping, 1 small carton of small curd cottage cheese, 1 small package orange gelatin and 1 small can mandarin oranges (drained).
Soften the whipped topping in the refrigerator (if frozen). Put it in a mixing bowl and mix in the dry gelatin. Add the cottage cheese and oranges. Stir it all up. Refrigerate for 1 hour before serving. Double the recipe for a bigger salad.
Another easy salad is "Snicker Salad." It comes from our daughter-in-law Cindy who makes the salad for her family (if the kids don't get to the Snickers first).
"Snicker Salad" calls for: 1 bag mini Snicker bars, 6 apples (cut into bite-size pieces), 1 large jar marshmallow cream, and a large container of whipped topping. Mix whipped topping and marshmallow cream together. Cut the Snickers into smaller pieces. Then add the pieces and cut apples to the topping mix. Mix together. Chill.
