Early morning is my favorite time of day. In between chores, I enjoy a cup of coffee while I write my column. I savor the letters from my readers then, too. One of last week's letters came from Salliann Owens, of Loveland. (She has previously contributed to this column.)
Salliann wrote that she has made "Cake in a Mug" featured in this column early in October. Her granddaughters, Eleanor, 4, and Sharon, 17, share the cake. Salliann said that she adjusted the recipe with "an extra dose of flour and half brown sugar and half white sugar and a teaspoonful of pumpkin pie spice" to make a spice cake.
"Zucchies," a zucchini cookie recipe, is what Salliann sent me this time. She got the recipe from Bonnie S., who also lives in Loveland. I have not made the cookies yet because I need to buy some of the ingredients, but I thought readers might like to try the recipe for Thanksgiving.
You'll need these ingredients to make the cookies: 1 cup margarine, 1 1/2 cups sugar, 1 cup applesauce, 2 eggs, 1 teaspoon baking soda, 2 tablespoons cinnamon, 2 cups unpeeled grated zucchini, 1 tablespoon vanilla, 3 cups unsifted whole wheat flour, 1 teaspoon salt, 3 1/2 cups uncooked oats and 1 cup raisins. (Don't these sound like nutritious ingredients?)
Beat margarine and sugar together until creamy. Add applesauce. Beat eggs in a separate bowl and add to sugar mixture. Combine dry ingredients and add to mixture. Stir in oats, raisins and all other ingredients. Mix well. The dough will be stiff and difficult to stir, but the cookies will be moist.
Drop by teaspoons onto greased cookie sheet, and bake at 350 degrees for 10 to 12 minutes. Store in a covered container.

Yesterday, I had a call from Myrtle Bates of Craig who had a question about the cut-out recipe card from last week's column. This was for Jan Rinker's "Pumpkin Waffles." Myrtle found a repeat of "1 cup of pumpkin" on the cut-out card (in other words, the pumpkin was mistakenly put in twice). Please check and cross off the extra pumpkin. I'm sorry for the error.
